We celebrated our first Día de Reyes holiday this year. One of our sons has many food allergies so we avoided the traditional Roscón de Reyes, a type of sweet pastry only made for this holiday. We also opted out of hot chocolate. (okay that was because I forgot I had it in the pantry … ay!) I invited my mom and grandma over for dinner. Shrimp tacos were on the menu! With all the new year resolutions and food allergies in my house, I wanted healthy Mexican food that we could all enjoy.
Thanks to Chef Lala, I had Chef Lala Homemade Tequila Lime Cilantro Marinade on hand to cook the shrimp. It was super easy. We defrosted a bag of frozen shrimp, mixed in the marinade and chilled it in the fridge for half an hour. Then cooked the shrimp in on medium heat until all the shrimp cooked through. I served the shrimp whole on corn tortillas with shredded lettuce.
For our side dish, I tried a new recipe from Chef Lala ~ Mushroom, Onion and Cherry Tomato Stir Fry. Not only does this look pretty but it tastes good too! The secret ingredient is Chef Lala Homemade Chipotle Flavored Oil! I finished the dinner off with a side of white rice with cilantro and lime and simple black beans.
Our holiday meal was a success and everyone enjoyed it. ¡Gracias a Dios! It’s nice to find a way to make healthy, tasty food for my family that doesn’t keep me in the kitchen all night. Note: the next morning and a few times since, I used the Chipotle Flavored Oil to cook migas for breakfast. Delicious!
