Dinner Solutions for Busy Week Nights at Family Dollar #FDKnorrDinner

All week, I’ve been preparing for this great get-away I’m on in the Grand Teton National Park and it’s been a challenge to cook a tasty, hot meal for my family each night for dinner. Who am I kidding? It’s a challenge even when I’m not getting ready for an out-of-town trip. Rather than order take-out, I’d really prefer something to cook at home without all the fuss.

Recently, I stopped in our neighborhood Family Dollar and took advantage of the Buy 3 Knorr Sides, Get One Free offer and stocked up for the week ahead. I made the Mexican Rice with grilled chicken topped with cheese and fresh onions, served with black beans and corn and tortilla chips.  Am I the only one who uses tortillas chips as a garnish? Please say no. Now, I did have to add a few of my own ingredients to make it a full meal but I don’t mind because the whole meal was affordable and delicious.

My boys were happy mommy cooked dinner. I was happy cooking didn’t take long and that they cleaned their plates! Next week, I’m making the Cheesy Chicken Fiesta! Check out the recipe.
